Healthy Snickers Ice Cream (GF/V)

Try this guilt-free ice cream that’s creamy, chocolatey, and so good for your body & soul!  It’s made with whole ingredients and tastes just like a cold Snickers bar! 

 

Snickers Ice Cream Bar Ingredients:

      • 2 cans organic coconut cream 

      • 1 can coconut milk
      • 1/2 cup coconut sugar

      • 1 tbsp vanilla extract

      • 10-11 dates

      • Handful roasted peanuts

      • Vegan Chocolate Chips
      • Pinch of salt

     

     

    Directions:

    1. Date Caramel: Bring a pot of water to boil. Add dates. Boil till dates soften so they are easy to blend. Let cool.

    2. Ice Cream: Add coconut cream, milk, sugar, vanilla extract, and pinch of salt to blender. Taste this mixture – add more dates if more sweetness needed.

    3. Pour in ice cream layer in pan. Place in fridge for 4 hours. Remove from fridge once frozen and pour date caramel. Place in freezer to chill for 1 hour. Add peanuts on top. Freeze overnight.

    4. Cut into bars and coat with melted chocolate chips. Freeze for 10 minutes till chocolate hardens. Enjoy! 

     

    This is such a satisfying yet delicious sweet treat. It leaves you feeling great after you eat it because you know the ingredients are whole and clean! I love using the Trader Joe’s Coconut Cream and coconut milk because it’s one of the few on the market that doesn’t have gums added. Also the sweetness of this recipe can be changed according to your taste. I prefer things to be less sweet than most do so feel free to try out each layer before you freeze so you can add / remove dates or coconut sugar as needed! If you’re not someone who enjoys coconuts – you can also used soaked cashews for the base. They give that creamy texture and don’t have their own flavor. Mix it up and give it a go, you’ll love it!Â
