Chewy cookies filled with a mango pistachio cream. Should I say more? This healthy cookie is heavenly. It takes you to paradise with the creamy mango filling and the chewy shortbread crust…. And it’s healthy so indulge on!
Ingredients:
- GF Flour blend: 1 cup cassava flour, 1/4 cup ground chia seeds, 1/4 cup almond flour
- 1/4 cup coconut sugar
- 1/4 cup coconut oil
- 1 cup dairy free milk
- 2 tsp baking powder
- Filling: 1 can coconut cream, 3 mangoes, 1/4 cup maple syrup, lime, pistachios
- Handful of pistachios
Directions:
- Preheat to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix the dry ingredients. Then add the wet ingredients.
- Place the cookies on the baking sheet, make a thumbprint in the cookies for the mango filling to go in. Bake for about 20 minutes until the cookies have golden edges. Remove the cookies from the oven and let cool for 10 minutes.
- Make the filling. Blend 1 can of coconut cream, 3 mangoes, 1/4 cup maple syrup, and a squeeze of lime.
- Place the mango filling on the cooled cookies. Top with crushed pistachios and enjoy!
