Protein Chocolate Almond Muffins (GF / Dairy Free)

Moist Protein Chocolate Muffins that are packed with protein and fiber to help keep you full longer. Perfect for when you’re craving something sweet but also want to feel energized and satisfied! 

 

Protein Chocolate Almond Muffin Ingredients:

      • 1/2 cup cassava flour & 1/4 cup almond flour

      • 1/3 cup coconut sugar

      • 3 tbs cup cacao powder

      • 1 tsp baking powder

      • 2 egg whites, 1 yolk

      • 3 tbs oil

      • 1/2 cup milk

      • Optional: chocolate chips & sliced almonds

    Directions:

      1. Mix the dry ingredients. Add 1/2 cup of sugar instead of 1/3 cup if you like things sweeter. Add wet ingredients

      2. Scoop batter into muffin pan. Add chocolate chips & almonds on top.  

      3. Bake at 350F for 25 minutes & Enjoy!


      These protein chocolate muffins are great when you’re hungry and want a filling treat. I love that I can feel full after eating these and they don’t leave me craving more sweets. You can customize the recipe any way you want. Maybe sub the almonds for pecans or walnuts or add in some white chocolate chips. My wheels are already turning for another spin on this because these make the perfect breakfast! Some blueberry maple or cinnamon pecan ones would be amazing.
