White Chocolate Matcha Cookies (GF & V)

You won’t believe that these delicious chewy cookies are actually healthy. They have no refined sugar or gluten and are packed with nutrient filled ingredients! The matcha helps give a little earthy flavor – they’re perfect for a pick me up or even for a morning snack!

Ingredients

  • GF Flour blend: 1 cup cassava flour, 1/4 cup ground chia seeds, 1/4 cup almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup of matcha (add less if you want less matcha flavor)
  • 1/4 cup coconut oil
  • 1 cup dairy free milk
  • 2 tsp baking powder
  • handful of vegan white chocolate chips

Directions

  1. Preheat to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the dry ingredients. Then add the wet ingredients.
  3. Place the cookies on the baking sheet & bake for about 20 minutes until the cookies have golden edges. Remove the cookies from the oven and set them in a baking rack for 10 minutes. Your cookies are ready.
