You won’t believe that these delicious chewy cookies are actually healthy. They have no refined sugar or gluten and are packed with nutrient filled ingredients! The matcha helps give a little earthy flavor – they’re perfect for a pick me up or even for a morning snack!
Ingredients
- GF Flour blend: 1 cup cassava flour, 1/4 cup ground chia seeds, 1/4 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup of matcha (add less if you want less matcha flavor)
- 1/4 cup coconut oil
- 1 cup dairy free milk
- 2 tsp baking powder
- handful of vegan white chocolate chips
Directions
- Preheat to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix the dry ingredients. Then add the wet ingredients.
- Place the cookies on the baking sheet & bake for about 20 minutes until the cookies have golden edges. Remove the cookies from the oven and set them in a baking rack for 10 minutes. Your cookies are ready.
